Anyone else love how parmesan cheese gets when it gets all crispy? I adore it. The flavor. The texture.
So I realized that the air fryer would crisp it up so nicely and I LOVE the combination of parmesan and potatoes together. So voila! Air fryer crispy parmesan potatoes.
This easily serves 2-3 as a side dish (depending on what else you are serving as a side)! But I put the serving size as 2, just in case you cannot stop eating them like me.

Ingredients
- Baby potatoes or small red potatoes
- Olive oil
- Garlic powder
- Dried oregano (or other dried herb)
- Shredded parmesan cheese
- Salt

- All air fryers cook differently. Adjust cooking times as needed.
- Definitely wait to add the parmesan cheese until after potatoes are cooking. This way it will get nice and crispy without burning.
- Using air fryer parchment paper can help the parmesan cheese from falling through the air fryer basket.
How to make air fryer parmesan potatoes
Scrub the small red potatoes as needed, wash, and dry.
Cut potatoes into 1 inch pieces.
Add olive oil, garlic powder, dried oregano, and salt to the potatoes and toss until potatoes are coated in oil and herbs.
Add air fryer parchment paper to the air fryer basket and add potatoes.
Air fry at 400 degrees for 12 minutes. Then, open the air fryer and sprinkle parmesan over the potatoes.
Air fry for an additional 5-7 minutes until potatoes are tender and parmesan is crispy.
Plate and enjoy! Top with fresh herbs or serve with a dipping sauce, if desired. (I love this homemade chipotle mayo).
How to customize
These crispy parmesan potatoes are so easy to customize by just switching up the herbs and spices.
Want them smokier? Add a bit of chipotle chili powder or smoked paprika.
Want them spicy? Add some red pepper flakes or a pinch of ground cayenne pepper.
Want a different herb? Swap out the oregano for thyme, herbs de provence, or Italian seasoning.
