Air fryer pesto potatoes are crispy potatoes that are flavored with pesto. The potatoes are a delicious addition to meals, or could even be a tasty snack.
The air fryer is my absolute favorite way to cook potatoes. Especially crispy potatoes.
The air fryer just roasts them up perfectly. Crispy on the outside, fluffy on the inside.
I love adding pesto to the potatoes and getting that extra boost of flavor and freshness. My new favorite side dish.
Ingredients
- Baby potatoes - I love the tiny potatoes, but you can use slightly larger, they just will need to be cut into 1 inch chunks.
- Pesto - Use your favorite pesto here!
- Olive oil
- Salt
How to customize
Want to make the pesto potatoes spicy? Add a pinch of ground cayenne pepper or some red pepper flakes.
Want them to be a little smoky? Add some smoked paprika.
Want more basil flavor? Add some fresh basil to your potatoes.
Want to make them cheesy? Add a little grated parmesan cheese
What to serve with the potatoes
If looking for an air fryer main to serve with the potatoes, I love this air fryer panko chicken, air fryer crispy chicken thighs, or air fryer kielbasa.
If serving with something not made in the air fryer, these potatoes are delicious with harissa honey chicken, salmon en papillote, baked rainbow trout, or this turmeric chicken with asparagus.
Recipe notes
- All air fryers cook differently. Adjust times as needed! Also, red potatoes may take slightly longer to cook than yellow potatoes.
- The addition of pesto at the end makes the dish. It gives that extra pesto flavor that the potatoes need.
How to make air fryer pesto potatoes
Preheat air fryer for 5 minutes at 400 degrees F.
Add olive oil, salt, and 2 tablespoons of pesto to a large bowl and stir to combine.
Wash and dry potatoes. Dice into 1 inch pieces.
Toss the potatoes with the pesto sauce.
Add potatoes to air fryer basket.
Air fry for 14-17 minutes, shaking halfway through. Potatoes are done when tender on the inside when pierced with a fork.
Plate, then top with 1 tablespoon of pesto.
