I recently made Rice Krispie treats for the first time in years. My daughter needed to bring a treat to share with her friends at school, and my mind went to Rice Krispie treats. And they were so good. We all enjoyed the leftovers for a few days.
But I had this big box of Rice Krispies, and in that moment I knew. A Ninja Creami Rice Krispie treat ice cream should happen. If you love Rice Krispie treats and marshmalloey goodness, you'll love this recipe.
It's got sweetness, it's got crunch, it's got that perfect marshmallow flavor. It's perfect. There's a pinch of salt, since Rice Krispie treats typically use salted butter. It brings it all together. My daughter absolutely looooved this one! So we'll definitely be making it again.

- Ricotta
- Milk
- Sugar
- Vanilla extract
- Salt
- Marshmallow fluff (or mini-marshmallows)
- Rice Krispies
How to make Ninja Creami Rice Krispie treat ice cream
Mix up the base using ricotta, milk, sugar, salt, and vanilla extract. Freeze on a level surface for at least 18-24 hours.

Proccess on the ice cream setting and respin if needed. Create a well in the center of the ice cream and add the marshmallow fluff (or mini marshmallows). Use the mix-in setting to combine.

Top with Rice Krispies! The Rice Krispie treat ice cream should be marshmallowy and have the perfect crunch from the Rice Krispies.

Recipe tips
- I used my favorite ricotta base ice cream recipe for the base, but if you have another vanilla base you prefer, you can use that instead.
- If the ice cream is too soft after adding the marshmallow fluff or marshmallows, simply return to the freezer for 10-20 minutes to harden.
- If you have leftovers, smooth out the top and refreeze.

Ice Cream
- 1 cup ricotta
- 1 cup milk
- ¼ cup sugar
- 1 teaspoon vanilla extract
- 1 pinch salt
Mix-ins and toppings
- ⅓ cup marshmallow fluff or mini marshmallows
- ¼ cup Rice Krispies
Instructions
- Add ricotta, milk, sugar, vanilla extract, and a pinch of salt to your Ninja Creami container. Stir to combine. (You can also blend it up if you prefer, but it's not needed).
- Freeze for at least 18 hours on a level surface in your freezer.
- Remove from the freezer and process on the Ice Cream setting. Respin if needed.
- Create a well/hole in the center of the ice cream and add the marshmallow fluff (or mini marshmallows). Use the Mix-in setting to combine.
- Scoop out and top with Rice Krispies.
