Ninja Creami lemon meringue ice cream is inspired by lemon tarts and lemon meringue pies. It uses lemon curd for that perfect lemony taste and is topped with meringue cookies and shortbread cookies.
This Ninja Creami lemon ice cream recipe reminds me of a delicious lemon meringue tart. Or a lemon meringue pie.
I made a lemony ice cream and then mixed in lemon curd and meringue cookies. I topped with more meringue cookies and crushed shortbread cookies. It was SO good.
As the meringue cookies get added as a mix-in, they create little meringue shards that are such an amazing treat and texture in the ice cream.
And while I added crushed shortbread cookies, you can also use graham crackers instead. Both are delicious.
Ingredients
- Cottage cheese
- Milk
- Sugar
- Lemon curd
- Meringue cookies
- Shortbread cookies (or graham crackers)
How to make Ninja Creami lemon meringue ice cream
Add cottage cheese, milk, sugar, and lemon curd to your Ninja Creami container and stir to combine.

Freeze for at least 18 hours on a level surface.

Process on the ice cream setting. Respin if needed. Make a little well in the center and add 2 little meringue cookies and more lemon curd. Use the Mix-in feature to combine.

Add more meringue cookies and crushed shortbread cookies (or graham crackers) for toppings. Enjoy!

Recipe tips
- If your ice cream gets too soft after adding the mix-ins, simply place back in the freezer for 10-20 minutes to harden.
- If you have leftovers, smooth out the top and return to the freezer.
- You can swap out the cottage cheese for ricotta cheese if desired.

- Add 2 small meringue cookies and 2 Tablespoons lemon curd. Use the Mix-in feature to combine.
