Air Fryer Tuscan Salmon is a fun take on the popular recipe. The salmon and tomatoes are cooked in the air fryer to perfection. The salmon is paired with a creamy, flavorful Tuscan-inspired sauce.
I love Tuscan flavors. I've made Tuscan chicken and Tuscan salmon so many times. And this Tuscan Chicken Soup is one of my favorite things to make.
And I've fallen in love with my air fryer, so I had to make a creamy Air Fryer Tuscan Salmon.
Why make salmon in the air fryer?
Salmon gets perfectly cooked in the air fryer. And if you're looking for crispy skin, the air fryer is so wonderful at cooking that skin to the perfect level of crispiness while still allowing the salmon to cook properly.
Also, cooking salmon in the air fryer is quicker than cooking it in the oven, and so much less messy than cooking on the stove! I love making an air fryer dijon salmon, air fryer honey garlic salmon, and air fryer teriyaki salmon. And here's a basic air fryer salmon recipe to customize!
Ingredients needed:
- Salmon
- Cherry or grape tomatoes
- Olive oil
- Spices (dried oregano, dried thyme leaves, smoked paprika, garlic powder, red pepper flakes, salt, pepper)
- Baby spinach
- Heavy cream
Cooking tips:
- Don't have cherry tomatoes? You can use sun-dried tomatoes instead of fresh cherry tomatoes. In that case, don't add the sun-dried tomatoes to the air fryer. You'll just add them directly to the sauce.
- Not a spinach fan? You can use kale instead or leave it out altogether.
- All air fryers do cook differently. Cooking times may also depend on the size/thickness of your salmon. You may have to adjust the cooking time based on your salmon.
- You can cook this recipe with skin on or take the skin off the salmon before cooking.
- This recipe serves one, but it is easily doubled.
How to make:
First, pat the salmon dry with paper towels and then brush all sides with olive oil and sprinkle with salt and pepper.
Slice the cherry tomatoes in half and place in a medium bowl. Add olive oil salt, pepper, and dried oregano.
Toss to combine.
Add the tomatoes (face up) and the salmon (skin side up if the skin is still on) to your air fryer basket. Cook at 400 degrees for 10 minutes.
While salmon is cooking, prepare your spices. Add all spices to a bowl.
Once salmon is done, add your sauce ingredients to a large skillet. Add the cream, spinach, cooked tomatoes, and dried spices to the skillet. Heat over medium heat for 3 minutes, stirring frequently. Turn heat down if it starts heating too much.
Serve the salmon with the cooked sauce and enjoy!

Ingredients
For Salmon and Tomatoes
- 6 oz salmon filet
- 10 grape or cherry tomatoes
- 2 teaspoons olive oil divided
- ¼ teaspoon dried oregano
- salt
- pepper
For Sauce
- ½ cup heavy cream
- ½ cup baby spinach
- ½ teaspoon dried thyme leaves
- ½ teaspoon dried oregano
- ½ teaspoon smoked paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon red pepper flakes optional
- salt
- pepper
Instructions
- Pat the salmon dry with paper towels. Brush all sides with 1 teaspoon olive oil and season with salt and pepper.
- Slice the cherry tomatoes in half and place in a bowl. Add 1 teaspoon olive oil, ¼ teaspoon dried oregano, salt, pepper, and toss to combine.
- Place the salmon into the air fryer basket with the skin side up. Add the tomatoes to the air fryer basket, face up.
- Air fry at 400 degrees F for 10 minutes.
- While the salmon cooks, add the spices (thyme, oregano, smoked paprika, garlic powder, red pepper flakes) for the Tuscan sauce into a bowl.
- After salmon and tomatoes are done cooking in the air fryer, add the heavy cream, spinach, spices, and cooked tomatoes to a large skillet.
- Heat over medium-low heat for 3 minutes, stirring frequently, until spinach is wilted. If mixture starts boiling, turn down the heat.
- Serve the sauce with the cooked salmon. Season with more herbs and red pepper flakes as desired.
