Air fryer apricots are a delicious treat to make with this stone fruit. They are similar to peaches, but smaller and more tart. The apricots are delicious when air fried!
I was recently talked into buying a little box of apricots from someone at the grocery store who was giving out samples. She said they would be perfectly ripe in 2-3 days. So I bought the little box.
And I kinda fell in love. Apricots are a lot like a smaller version of peaches, but slightly firmer and definitely more tart. And I love that slightly acidic flavor that apricots have.
While apricots are delicious raw, I also knew I wanted to try air frying them. And I think they turned out well! They definitely retain a lot of their tartness when cooking, so adding the brown sugar seems necessary. I also like serving with something sweet like ice cream or whipped cream, as it really balances out the tart apricots and makes for a deliciously balanced dessert.

- Apricots - Apricots are like a smaller, tarter peach.
- Brown sugar - You could also drizzle with honey or maple syrup if you prefer.
How to make air fryer apricots
Cut the apricots in half lengthwise, running your knife around the pit, just like you would a peach.
Remove the pits. These should be easy to just pop out with your fingers! (It's one of the things I love about apricots).
Add your apricot halves to a plate or cutting board and add brown sugar to the apricot halves.
Carefully place in your air fryer basket.
Air fry at 350 degrees F for 7-8 minutes. (If you want them more roasted and caramelized, you may want to cook them for 9-10 minutes.
Remove from the air fryer (carefully, they will be soft!) and plate. I think these are best served with whipped cream or ice cream to add more sweetness to the tart apricots.

Because the apricots are tart and acidic, they pair nicely with vanilla ice cream or some sweetened whipped cream. I also like adding a crunchy element like toasted almonds, chopped pecans or walnuts, or granola!

- 6 apricots washed
- 2 teaspoons brown sugar
Instructions
- Cut apricots in half lengthwise and remove the pits.
- Place apricot halves cut side up on a plate and then top with the brown sugar, dividing amongst the apricots.
- Carefully place apricot halves in air fryer basket face up. Air fry for 7-8 minutes at 350 degrees F.
- Remove from the air fryer and plate. Serve as desired.
