So Labor Day has come and gone. For a lot of people, Labor Day signifies the end of summer. And a lot of people miss those summer days. Relaxing, warm weather, vacations, etc.
But not me and not this year. First of all, in Austin, summer means temperatures of 100+ degrees many days. Which makes being outside almost unbearable unless you are relaxing in a pool. Second of all, September means baby month around here! And we are so excited to meet our little girl.
So I very much welcome this unofficial start of autumn… or fall.. whatever you want to call it. Yesterday we got a taste of fall weather. Temperatures were in the 80s and we opened our windows in our house and just relished the cooler weather. I mentioned to Josh that I was curious if we would wind up having a summer baby or an autumn baby. Could go either way, just depends on when she wants to arrive.
But… while we wait for baby, I’m trying to eat healthy to give her the nutrients she needs before she makes her appearance. Which means more lunches like this toast with tomato and hummus and less lunches of mac & cheese.
Use whatever bread you’d like, but I’ve been loving Dave’s Killer Bread – 21 Whole Grains and Seeds. Just look at that seeded goodness. Made even better topped with hummus, tomatoes, and basil. Yum.
Tomato and Hummus Toast with Fresh Basil
- 1 slice whole grain bread
- ¼ cup hummus
- 2 campari tomatoes
- 4-5 leaves basil
- Cut the tomatoes into medium-thick slices
- Toast the slice of bread
- Take the bread and spread the hummus on top. Lay the slices of tomato on top of the hummus, and then top with the basil leaves. Add a sprinkling of salt and pepper. Slice and enjoy!
