Green Goddess Chicken Bites

If you love green goddess dressing, this recipe is for you. The green goddess chicken bites are so quick and easy to make. They are delicious served as is, on top of rice or salad, or just alongside your favorite side dishes.

I shout it from the rooftops, I love easy recipes. And this is one of the easiest. All it takes is 3 simple ingredients. Chicken breast, green goddess dressing, and garlic powder. And a little oil for cooking. But that barely counts as its own ingredient.

You can always make your own green goddess dressing, but honestly? I love just using the stuff that's already all bottled and delicious. It saves me so much time having to make my own.

What is green goddess?

Green goddess dressing is a creamy dressing with parsley, chives, and sometimes other herbs.

Use your favorite green goddess dressing in this recipe to make it an easy, three ingredient chicken recipe.

Recipe tips:

  • Cooking time will depend on how large you cut your chicken pieces. I cut mine into 1 inch cubes.
  • Dry the chicken before slicing. This will allow the green goddess dressing to better stick to the chicken while it marinades.
  • You can marinade the chicken for several hours, but at least 30 minutes.
  • You can add any additional seasonings you want to the chicken or marinade.
  • I like to top my chicken bites with fresh herbs to really amp up the flavor. This is completely optional.

Instructions:

To make the green goddess chicken bites, simply dry your chicken breasts. Then cut into 1 inch cubes.

To a bowl or ziplock bag, add your chicken, garlic powder, and green goddess dressing. Mix together to make sure green goddess dressing covers every chicken bite. Place in the refrigerator to marinate.

Pull chicken out, and heat oil in a large skillet over medium heat. Add chicken to pan, and cook. After chicken is done cooking, add more green goddess dressing, and salt and pepper to taste.

Enjoy on top of a salad, a rice bowl, or just alongside your favorite side dishes. These green goddess chicken bites would pair nicely with coconut oil sweet potatoes, roasted asparagus, melting sweet potatoes, or roasted acorn squash.

Ingredients
  

  • 1 lb chicken breasts
  • 1 tablespoon oil
  • salt
  • pepper
  • fresh herbs optional
  • ¼ cup green goddess dressing

Marinade

  • ½ teaspoon garlic powder
  • 2 tablespoon green goddess dressing

Instructions
 

  • Dry your chicken breasts and cut into 1 inch cubes.
  • Place cut chicken into a Ziplock bag or bowl. Add the garlic powder and 2 tablespoon green goddess dressing. Mix to combine so chicken is coated.
  • Place in the refrigerator for at least 30 minutes to marinade.
  • Remove chicken from refrigerator and heat oil in a large skillet over medium heat.
  • Once oil is hot, add chicken pieces in a single layer and cook for 4-5 minutes. Stir, and then cook for an additional 3-5 minutes, stirring every 30 seconds or so, until chicken is cooked through.
  • Turn heat to low and add ¼ cup green goddess dressing to pan. Stir to combine. Cook for 1 minute until sauce is hot. Add salt and pepper to taste.
  • Plate, then top with fresh herbs if desired.

Notes
