Air Fryer Roasted Tomatoes

Air Fryer tomatoes are such a quick and easy recipe to make. Grape or cherry tomatoes get perfectly roasted in the air fryer so that they are slightly caramelized and delicious. This air fryer recipe can easily be made with cherry, grape, roma, or campari tomatoes. And it's so easy to customize to whatever seasonings you want to include!

I have roasted tomatoes in the oven more times than I can count. But using my air fryer is my current favorite way to cook up tomatoes. I love using these tomatoes in so many dishes. Pastas. Salads. With beans. On toast. And they are also delicious topping chicken or with seafood.

But when you can use the oven, why roast tomatoes in the air fryer? It's simple.

Why roast tomatoes in the air fryer:

  • Uses less energy than heating up an entire oven to roast tomatoes. Also, keeps your house cooler since you're not turning on the oven. Perfect in those summer months when you want to keep your house cooler!
  • Takes less time. These roast up in 10 minutes. Quicker than the oven!
  • I use less oil with these then I would if I put them in the oven.
  • More delicious -- I prefer these to my oven-roasted tomatoes.

What type of tomatoes to use:

I actually used grape tomatoes in this recipe because that's what the grocery store gave me, but I love using cherry tomatoes too!

You can use a larger tomato like roma or campari. If using a roma or campari tomato, slice into 4 pieces to air fry.

I don't recommend using a watery tomato like a beefsteak tomato, as it won't dry out enough when air frying to get that perfect roasted texture.

Customization ideas:

  • We added a bit of dried oregano to our tomatoes before air frying, but you could add an Italian seasoning blend, some thyme, or some garlic powder.
  • Add a touch of cayenne pepper, red pepper flakes, or some chili powder for a touch of heat.

Can you refrigerate?

Yes, you can absolutely refrigerate the tomatoes after they've been air fried. Store in an airtight container for 2-3 days.

To reheat, place in the microwave or reheat in a skillet on the stove with a little bit of olive oil.

How to enjoy:

There are so many ways to enjoy the air fryer roasted tomatoes! Here are several ideas:

  • On top of toasted bread with fresh basil, as pictured.
  • On top of a cooked chicken breast or some cooked shrimp or fish.
  • With cooked pasta.
  • In a salad.
  • Over some oven roasted asparagus.
  • With some eggs for breakfast.
  • On top of some hearty cooked beans.

Cooking tips:

  • All air fryers are different. I have the Cosori Max XL. It's a basket-type air fryer. If you have a smaller air fryer or a different one, your tomatoes may need a little more or less time. Also, for a smaller air fryer, you will probably need to air fry your tomatoes in two batches.
  • Watch carefully! I like to check on the tomatoes often to make sure they are not overcooking.
  • These tomatoes do not need any shaking while cooking. Just add them to the air fryer in a single layer, and let the air fryer work its magic.

How to make:

First, take your pint of cherry or grape tomatoes and wash and dry the tomatoes.

Slice each tomato in half and add to a bowl. Add the olive oil, salt, and oregano. Toss to combine.

Arrange in your air fryer basket, skin side down. Make sure to cook in a single layer.

Air fry at 400 degrees for 10 minutes, checking around the 7 minute mark for doneness.

Remove tomatoes from air fryer and enjoy as desired.

Ingredients
  

  • 1 pint cherry tomatoes can also use grape tomatoes
  • 2 teaspoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon dried oregano

Instructions
 

  • Wash and dry your tomatoes. Next, slice each in half lengthwise and add to a medium bowl.
  • Add the oil, salt, and oregano and stir or toss to combine.
  • Add the tomatoes into the air fryer basket in a single layer, skin side down.
  • Cook at 400 degrees F for 10 minutes, checking around the 8 minute mark for doneness.

Notes

Don't use a larger, watery tomato like a beefsteak, as these will not roast properly in the air fryer with this recipe.

    We love tomatoes in the airfryer too! We have a Cuisinart toaster/convection/airfryer combo. I usually put the cherry tomatoes in a rectangular Pyrex with a little olive oil and salt and airfry at 400 for less than 8 minutes.
