Air fryer lemon zucchini roasts up perfectly. This is an easy zucchini recipe that makes a light and bright side dish in less than 20 minutes.
I love making fresh, healthy food in my air fryer. The air fryer is just so perfect for roasting up vegetables.
And when it's spring and summer? I love grabbing zucchini and roasting it up. And this is a Greek-inspired air fryer zucchini.
It's got the flavors of lemon and oregano for a pop of brightness and freshness. A favorite of mine in those spring and summer months.
Ingredients

- Olive oil
- Lemon
- Oregano
- Salt
- Pepper

How to make the air fryer lemon zucchini
Dice the zucchini into cubes about ¾ inch in size. ( I love using my lightweight kiwi knives to slice zucchini).
In a large bowl, add the olive oil, juice from ½ a lemon, oregano, salt, and pepper.
Stir to combine.
Add the zucchini to the bowl and stir to combine.
Preheat the air fryer for 5 minutes, then add the zucchini to the air fryer basket.
Cook at 400 degrees F (200 degrees C) for 10-12 minutes.
Plate and enjoy!
Customizations and substitutions
Want your zucchini a little spicier? Add some red pepper flakes.
Not a fan of oregano? Use a different dried herb. You can use herbs de provence, Italian seasoning, thyme, etc.
Want to make this dish a little fancier? Add some crumbled feta and fresh herbs to the finished zucchini.
You can also use yellow squash instead of zucchini if that's what you have/like.
What to serve with the zucchini
I love this air fryer lemon zucchini with some air fryer panko chicken, air fryer panko cod, air fryer peri peri chicken thighs, or air fryer honey dijon salmon.
This zucchini also pairs well with some peri peri rice, ras el hanout chicken thighs, or air fryer smashed potatoes.

- 1 teaspoon dried oregano
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Wash and dry zucchini. Dice into ¾ inch cubes.

- Add zucchini to the bowl and stir to coat in the oil, lemon juice, and seasonings.
- Preheat the air fryer for 5 minutes at 400 degrees F.
- Add zucchini to the air fryer and cook for 10-12 minutes at 400 degrees F (200 degrees C), shaking halfway through.
- Remove from air fryer and enjoy!
