Scrambled eggs with harissa and smoked salmon is a delicious breakfast full of flavor. It's a delicious savory breakfast that has a touch of spice from the harissa. You can top these scrambled eggs with whatever fresh herbs you love, or just serve plain.

I'm a fan of scrambled eggs. And smoked salmon. And spice. So I decided to marry these three things and make fluffy scrambled eggs with smoked salmon and harissa. A match made in heaven.

The harissa adds that needed touch of spice to liven up scrambled eggs. The smoked salmon adds that delicious saltiness. And the eggs? They are the wonderful base for all these flavors.

Add in some fresh herbs? Possibly the perfect breakfast.

I used fresh parsley here, but these scrambled eggs would be delicious with dill, cilantro, chives, or even a tiny bit of mint.

Ingredients:

  • Eggs
  • Smoked salmon
  • Harissa (jarred, not the ground spice)
  • Butter (or olive oil)
  • Fresh herbs

What is harissa?

Harissa is a North African spice that has a bit of heat married with a touch of citrus. You can get it in powdered spice form, a paste, or a condiment. This recipe uses the jarred version.

I love using harissa in so many recipes, it's one of my favorite ways to spice up a recipe. I've used it in pasta sauces, to flavor butter, and to season veggies! Here's a few recipes I've used it in:

  • Roasted harissa carrots
  • Harissa butter
  • Cauliflower with a harissa tahini sauce
  • Roasted zucchini with harissa and parmesan
  • Creamy harissa pasta

Where can you buy smoked salmon?

Smoked salmon can be found at most grocery stores in the cured meats section (where the salami normally lives). I can find it at H-E-B, Trader Joe's, Whole Foods, and Costco.

Cooking tips:

  • All stoves cook differently, and it can also depend on what type of pan you are using. Make sure to adjust cooking times as needed so that your scrambled eggs are properly cooked to your liking.
  • This is a recipe that is so easy to customize! Want a little more smoked salmon? Add more smoked salmon. Want it a little spicier? Add more harissa.
  • Note - if using olive oil, use 2 teaspoons instead of 1 tablespoon.

How to make:

Making these scrambled eggs with smoked salmon is so easy!

First, crack your eggs into a bowl and add the harissa. Scramble your eggs with the harissa. Then, melt your butter or heat your olive oil over a medium-low heat. After butter melts, add your beaten eggs and harissa.

Cook, then add the smoked salmon.

Cook until your scrambled eggs reach your desired doneness. Top with more harissa and fresh herbs.

Ingredients
  

  • 2 eggs
  • ½ teaspoon harissa plus more for serving
  • 1 Tablespoon butter
  • 1 ounce smoked salmon torn into small pieces
  • fresh herbs

Instructions
 

  • Crack two eggs into a bowl. Add the harissa and scramble together.
  • In a small skillet, add your butter and let melt over medium-low heat.
  • Add the egg and harissa mixture to the pan. When eggs start to cook, add the smoked salmon. Cook, stirring frequently, until eggs reach desired doneness.
  • Plate, then drizzle with any additional harissa, and top with fresh herbs.
