I love roasting up veggies in my air fryer. I find that roasting veggies just brings out the natural sweetness.
And these mini sweet peppers are perfect for cooking in the air fryer! They already have a touch of natural sweetness that the air fryer just brings out even more.
And they aren't spicy at all. So you get the beauty of peppers without the spice. And if you do want a little spice, you can add red pepper flakes.

What are mini peppers?
Mini peppers are much smaller than bell peppers, but are very mild like bell peppers. They do tend to be sweeter than bell peppers.
Like bell peppers, they typically come in red, yellow and orange colors.
Mini sweet peppers are perfect for appetizers and snacks, or as an ingredient in a main dish. I also love stuffing them like in these air fryer feta stuffed mini peppers.
Customization ideas
While I seasoned these mini peppers with dried oregano, you could leave it out or flavor with a different dried herb.
Since these peppers aren't spicy, if you do want a bit of spice, add some red pepper flakes.
Want a little acidity? Add a squeeze of fresh lemon juice or lime juice to the peppers after they come out of the air fryer.
What to serve with the mini peppers
I love serving the air fried peppers as a side dish. They're delicious with air fryer paprika chicken, air fryer peri peri chicken, air fryer panko salmon, air fryer pesto salmon, and air fryer panko chicken.
I also love them with some spicy feta dip or some air fried corn on the cob.
And my husband loves using them in tacos or burrito bowls!

How to make air fryer mini peppers
Wash and dry peppers if needed.
To a large bowl, add olive oil, dried oregano, and salt.
Stir to combine.
Add the peppers and gently stir until all peppers are coated in olive oil and herbs.
Place in the air fryer basket.
Air fry at 400 degrees F (200 degrees C) for 12 minutes, flipping halfway through.
Serve as desired! I topped mine here with some fresh basil.

Instructions
- Wash and dry the mini peppers.
