Air Fryer Mediterranean Salmon is a delicious and healthy salmon dish that cooks up in less than 15 minutes! It's finished off with a healthy squeeze of fresh lemon juice for brightness!
I adore fresh Mediterranean flavors and I love salmon. So of course I had to pair the two and make an air fryer salmon inspired by Mediterranean flavors.
This is a recipe that serves one (perfect for me when I'm making an easy lunch for myself at home, but can be doubled, tripled, or quadrupled if serving more!
I love making this when I want a healthy but bright and flavorful meal. The salmon always comes out perfectly flaky, and I love the brightness the squeeze of fresh lemon juice brings.

What are Mediterranean flavors?
Mediterranean flavors can vary depending on what country you are talking about on the Mediterranean. Depending on the country, it could be the freshness of herbs such as oregano, basil, mint, or parsley.
Spices like sumac, harissa, etc. are associated with the Mediterranean in different regional cuisines.
Lemon, garlic, and fresh vegetables like zucchini, tomatoes, and olives are also frequently associated with Mediterranean flavors.
For this recipe, we leaned into the flavors of oregano, garlic, and lemon for a bright delicious Mediterranean flavor inspired by Italy and Greece.
How to customize
This recipe is easy to customize with other Mediterranean flavors!
Love harissa and mint? Top with some harissa seasoning and then serve with fresh mint leaves.
Use Italian seasoning, herbs de provence, or even tarragon as the dried herb, depending on what you love.
Want a little heat? Add some red pepper flakes to your salmon before cooking.
What to serve with the salmon
This salmon is delicious served with so many different things!
For air fryer vegetables, I love serving with these air fryer Mediterranean vegetables, air fryer broccolini, air fryer garlic zucchini, air fryer radishes, air fryer baby potatoes, or air fryer parmesan tomatoes.
If I'm pairing with foods you don't make in an air fryer, I love this tomato ricotta tart, lemon orzo with asparagus, smashed cucumber mint salad, or roasted harissa cauliflower.
The air fryer salmon is also delicious served on top of creamy harissa pasta or alongside air fryer pesto garlic bread.

- Cook times may depend on the thickness of your piece of salmon.
- Using air fryer parchment paper can help keep your salmon from sticking to the air fryer basket. You can also spray the basket or brush with oil.
- If your salmon has skin, you can either remove it before cooking, or leave it on when cooking, and remove after cooking (I usually do option 2, as I find it's easier!)
How to make air fryer Mediterranean salmon
Pat at salmon fillet dry with paper towels. Remove any bones if needed.
Drizzle with olive oil and rub into the surface. Sprinkle with salt and pepper.
Add garlic powder and dried oregano to the top of the salmon.
Place salmon in the air fryer. (If placing directly in air fryer and not using air fryer parchment paper, brush or spray air fryer basket with oil to prevent salmon from sticking).
Air fry at 400 degrees for 7-10 minutes (cook time will depend on thickness of salmon).
Remove from air fryer and squeeze fresh lemon juice over the top of the salmon.

- ½ teaspoon oregano or Italian seasoning

Instructions
- Pat the salmon fillet dry with paper towels and remove any bones. Place on a plate. Drizzle the fillet with olive oil and rub into the surface.
- Season the salmon with salt and pepper. Then sprinkle the garlic powder over the top, then the oregano.
- Either brush or spray the air fryer basket with oil, or use air fryer parchment paper. Place the salmon in the air fryer basket.
