Air Fryer Garlic Herb Zucchini

Air Fryer Garlic Herb Zucchini is flavorful, light, and makes the perfect side dish! This air fryer zucchini cooks quickly in the air fryer and is so easy to make. The zucchini gets roasted to perfection in the air fryer.

If you have an air fryer, then you know the secret. It's magic. And there are so many foods that just cook up perfectly in the air fryer that you can't imagine cooking them any other way.

This air fryer zucchini is one of those. The zucchini just gets both perfectly roasted and perfectly tender. And it's so easy. I love easy, flavorful meals.

This zucchini has a garlic herb flavor that pairs well with so many dishes, including chicken or fish. It's light, bright, and makes the perfect easy side dish.

Ingredients

  • Zucchini
  • Olive oil
  • Garlic powder
  • Dried parsley
  • Dried thyme
  • Salt

Recommended tools

You will definitely need an air fryer for this recipe, as this is air fryer zucchini! If you're still on the hunt for an air fryer, check out this post about 5 Things to Consider Before Buying an Air Fryer. Also, this is the air fryer I have and I love it.

You can also use air fryer parchment paper (this is special because it has holes that allow airflow). However, this isn't necessary, just helps to keep your air fryer basket a little cleaner! There are some recipes I use this in, and some I don't.

Can I use fresh garlic?

No, I don't recommend using minced fresh garlic in this recipe. The garlic will burn in the air fryer. Garlic powder works much better and still gives you that garlic flavor without the chance of burning.

What to serve with the air fryer zucchini

I love serving some tasty chicken on salmon with this air fryer zucchini.

These Greek-inspired Chicken Thighs pair nicely with the zucchini, as does this Chili Lime Chicken (both cooked in the air fryer!)

If you're wanting to cook up some salmon, I suggest this Air Fryer Honey Mustard Salmon or Air Fryer Tuscan Salmon or just use this basic guide to cooking Air Fryer Salmon and add your own flavors!

Recipe tips

  • All air fryers cook differently, please check the zucchini several times to achieve your perfect level of doneness.
  • The dried thyme and dried parsley can easily be substituted out with other dried herbs like oregano, marjoram, or rosemary.
  • The air fryer does not need to be preheated for the zucchini to get roasted.
  • You do not need to spray your air fryer basket with oil. The oil that you toss the zucchini in helps keep it from sticking to the basket.

How to make

The first step is taking your zucchini and slicing it up into chunks.

Next, in a large bowl, add your olive oil, garlic powder, garlic powder, dried thyme, dried parsley, and salt. Stir to combine.

Add your zucchini and mix together until zucchini is coated.

Place zucchini in your air fryer basket in a single layer. Air fry for 8-10 minutes at 400 degrees F, shaking halfway through.

Ingredients
  

  • 1 zucchini
  • 1 Tablespoon olive oil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon salt

Instructions
 

  • Wash and dry the zucchini. Slice into chunks, about ½ inch thick, discarding the end pieces.
  • In a large bowl, add the olive oil, thyme, parsley, garlic powder, and salt. Stir to combine.
  • Add the chopped zucchini to the bowl. Toss to combine.
  • Add the zucchini in a single layer to your air fryer basket. Cook at 400 degrees F for 8-10 minutes, shaking halfway through.

    Your picture shows using parchment paper in the fryer. Is this the case? Do you use this paper while using the air fryer? Your steps don't include this but picture shows it.

      Hi Judi! The use of parchment paper is completely up to you. I sometimes use it, but many times don't. It's more of a matter of how messy I want my air fryer to get. :)
      If you DO use parchment paper, make sure to use the kind that is specific for air fryers that has holes in it. That helps the airflow in air fryers. But it's not necessary!
