Air fryer stuffed mini peppers are a delicious appetizer or side dish. These bite-sized treats are not only visually appealing but also bursting with flavor. Feta cheese adds a tangy and salty taste that perfectly complements the sweetness of the peppers.
I cannot get enough of these mini peppers. I knew I wanted to slice them and stuff them with some delicious cheese. And I had some feta in my refrigerator, and it seemed like the perfect pairing.
And it was! The salty, tangy feta paired perfectly with the sweet peppers. I topped them with fresh basil for an even more Mediterranean feel.
This was a delicious appetizer that I'll be making again and again as long as I can find the mini peppers in stores!
Ingredients
- Mini peppers - These are like mini bell peppers. They are a mild pepper and delicious!
- Feta cheese (you could also use cream cheese or goat cheese if you prefer)
- Olive oil
- Dried oregano
- Basil
How to make the air fryer stuffed mini peppers
In a bowl, add the feta and olive oil.
Add dried herbs and smash everything together.
Slice the mini peppers in half and remove any seeds and any of the inner ribs (this should be very easy!)
Stuff the peppers with the feta mixture.
If needed, add air fryer parchment paper or brush the air fryer basket with oil. Add stuffed peppers to the air fryer basket in a single layer.
Air fry at 400 degrees for 9-10 minutes. Top with freshly sliced basil leaves.
Plate and enjoy!
Recipe notes
- The outside of the peppers do not need any oil. They will roast nicely in the air fryer without oil.
- All air fryers cook differently. Adjust cook times as needed.
- Use air fryer parchment paper or brush air fryer basket with oil to prevent peppers from sticking.
- This recipe is easy to double by using a whole block of feta and a 16oz bag of mini peppers, but you will likely need to cook in two batches.
What is feta?
Feta is made from sheep's milk or a mixture of sheep's and goat's milk. The cheese is soft, crumbly, and has a distinctive tangy, salty flavor that makes it a favorite in many dishes.
It is typically made in Greece, and is popular in Greek and Mediterranean cuisine.
You can buy feta either in blocks or already crumbled up in a tub.
Customization ideas
This recipe is so easy to customize, simply by changing up the feta stuffing for the peppers. Here are a few ideas.
Want a milder feta flavor? Instead of doing all feta, do half feta and half cream cheese for the mixture. You could also do all cream cheese or use goat cheese instead.
Want to swap out the herb or add more? Instead of oregano, use Italian seasoning, dried basil, or another dried herb you love.
Want a more citrusy flavor? Add lemon zest to the feta.
Want more spice? Add some red pepper flakes and black pepper to the feta mixture.
What to serve with the peppers
The feta-stuffed peppers are delicious served alongside this air fryer Mediterranean salmon, air fryer pesto salmon, air fryer harissa chicken, or air fryer Greek chicken thighs.
You can also serve with veggies like these air fryer grape tomatoes, air fryer broccolini, or air fryer lemon zucchini.
