When I don't feel like cooking, I make pasta. And I love adding flavor to it. My currently favorite flavor combination is miso butter. So I've been using it with salmon, cod, and especially noodles.
This recipe is simple and delicious. Noodles are cooked and then coated in a delicious miso butter sauce. It's savory. It's umami. It's slightly salty. And a tiny bit sweet. It's decadent. And it's delicious.

This recipe for miso butter noodles is fast. It's ready in less than 20 minutes. It's also incredibly easy. All it takes is boiling up your pasta and making a quick sauce. And it's delicious. It only uses 5 ingredients, but they provide a delicious flavor to the miso butter sauce.
Ingredients
- Noodles - This recipe works well with most types of noodles. I used udon noodles, but you can use spaghetti, ramen, etc.
- Butter - I used salted butter, but you can also use unsalted and then salt the noodles to taste.
- Miso paste - I always use white miso paste
- Soy sauce - Regular soy sauce or tamari
- Brown sugar - This gives the dish a bit of caramelized sweetness. You can leave out the brown sugar if you prefer, and the dish will still be delicious.
- Toppings and add-ins - You can top with sesame seeds and green onions, and/or add in a variety of vegetables and proteins.
How to make miso butter noodles
Boil the noodles according to the package directions.
About 2-3 minutes before the noodles are done, add your sauce ingredients (miso, soy sauce, butter, and brown sugar) to a skillet over medium heat.
Cook for 2-3 minutes over medium heat, stirring almost constantly, until butter is melted and sauce it glossy and thickened.
Turn off the heat and add the noodles to the sauce.
Toss until coated. This is the point where you can also add in any mix-ins like cooked chicken, salmon, shrimp, or cooked vegetables.
Plate the noodles.
Add any toppings you like and enjoy!
Ideas for add ins and toppings
I love mixing up this recipe by including add-ins.
Proteins - I've added cooked chicken, cooked shrimp, and cooked salmon, and all have been delicious!
Vegetables - There are so many delicious vegetables you can add in. Here's a few ideas.
- Sauteed mushrooms - Sauteed garlic butter mushrooms are very tasty mixed in or served on top of the miso noodles.
- Broccoli - I always love broccoli, and I like to roast up broccoli and serve with the noodles.
- Spinach - When I add spinach, I usually leave the heat on in the skillet when adding the noodles, and add a handful or two of baby spinach at the same time. I stir until the spinach is wilted and then turn off the heat.
Recipe tips
- When heating the miso butter sauce, lower the heat if the miso sauce seems like it is cooking too quickly or burning, and make sure to stir almost constantly while sauce is cooking.
- Make sure to have any mix-ins/topping ready for adding right after the noodles are tossed in the sauce.
