These rosemary croissant croutons are so delicious and flaky. You can use fresh or dried rosemary to make the croutons. This recipe is so easy, you can make a batch whenever you want and it's a delicious way to use up leftover croissants.
I recently learned that Trader Joe's has Rosemary Croissant Croutons. And it seemed like such a brilliant idea. They sounded delicious.
But honestly? Trader Joe's takes a bit of time for me to drive to. So I only go every couple of months. So I decided to make a version at home!
The verdict? Flaky and delicious. I couldn't stop popping them in my mouth the first time I made these. I love them on salads. Provides such a nice bit of flaky crunch. I could even just eat these as an appetizer, much like you might get served bread at a restaurant. Fancy, flavorful, but so so easy to make.

Where can you find fresh rosemary?
You can find rosemary at the grocery store in the refrigerated section with the other herbs.
If you're lucky enough, you might also have rosemary in your yard or your neighbor's yard and can snip some off!
If you can't find fresh rosemary, or prefer to use dried, that works too! You will use less dried rosemary than fresh, as the flavor is more concentrated. See the recipe notes for amounts.
Where can you get croissants?
You can use any type of butter croissants with this, though I typically have leftovers of the kind I buy at the grocery store in the bakery section.
I will get a multi-pack at my local grocery store or at Costco. If you've bought the package from Costco, you KNOW how many come in that package!

Recipe tips
- If handled too roughly after slicing, the croissants will come apart. Be gentle when mixing and putting onto your baking sheet.
- If you would prefer a flavor other than rosemary, swap out with some oregano or thyme for a different flavor.

These rosemary croissant croutons are so delicious on top of a salad. They work perfectly in soup like this roasted butternut squash soup or this Instant Pot potato and leek soup.
I also just love to snack on them as is! They are tasty to eat as an appetizer or just an afternoon snack.
How to make croissant croutons
The first step preheat your oven to 350 degrees F. Then, get your croissants and slice them into cubes, about 1 inch in size.
Add to your bowl, then drizzle with olive oil and add your chopped rosemary, some sea salt, and black pepper. Toss together. Be gentle when tossing, the flaky layers of the croissant become more delicate after you've chopped them into chunks.
Add to your baking sheet, leaving plenty of room between the croissant pieces.
Bake for 5 minutes, then gently toss and bake for another 3-5 minutes.
Remove from the oven and enjoy!

Ingredients
- 2 cups croissant chunks
- 1 Tablespoon olive oil
- ½ teaspoon chopped rosemary fresh
- salt
- pepper
Instructions
- Preheat oven to 350 degrees F.
- Take croissants and slice into 1 inch chunks until you get 2 cups worth of croissant pieces, then add to a large bowl. Add olive oil, chopped rosemary, a sprinkling of salt and black pepper. Gently toss toss to combine.
- Spread out the croissant pieces onto a baking sheet. Bake in the oven for 5 minutes, then gently toss, and cook for another 3-5 minutes.
- Remove from the oven and enjoy!
