Air fryer potatoes and carrots is a quick and easy side dish all made in the air fryer. The potatoes and carrots get roasted in the air fryer in only 15 minutes.
It's always a treat when you can cook two vegetables in your air fryer at once and have them come out perfectly. And carrots and potatoes are a match made in heaven.
Both the potatoes and carrots get perfectly roasted in the air fryer in much less time that it would take to cook them in the oven.
Ingredients
- Carrots - I used 4 medium/large carrots. If using smaller carrots, you may want to use 5.
- Potatoes - I used 5 small yellow potatoes. If using larger potatoes, you may only need 2 or 3.
- Smoked paprika
- Garlic powder
- Olive oil
- Salt
How to roast potatoes and carrots in the air fryer
Preheat your air fryer for 5 minutes at 400 degrees F.
While air fryer preheats, dice potatoes and carrots into 1 inch pieces. Add to a large bowl.
Add olive oil, smoked paprika, garlic powder, and salt.
Stir to coat carrots and potatoes in the oil and seasonings.
Add to the air fryer basket.
Cook at 400 degrees F for 15-20 minutes, shaking after 10 minutes. Start checking for doneness at 15 minute mark, and keep cooking until carrots and potatoes are soft when pierced with a fork.
Plate and serve as desired!
Recipe tips
- Cook time may depend on how large you cut your potatoes and carrots. Try to cut them all the same size (as much as possible). If you cut larger than 1 inch, you may need to add more cooking time.
- Check the biggest potatoes and carrots and pierce with a fork to make sure they are cooked all the way through.
- If you use red potatoes instead of yellow/gold potatoes, they may take longer to cook.
Customization ideas
The potatoes and carrots can be customized with a variety of seasonings and spices! Sometimes I will use dried parsley or herbs de Provence to season before cooking.
And sometimes I will serve topped with mint and feta. It's easy to try out different seasonings and toppings!

Air fried potatoes and carrots pair great with a lot of air fryer mains! I like it with air fryer panko chicken, air fryer thinly sliced chicken breast, and air fryer pork chop bites.
