This dessert of strawberries and peaches is paired with a pillowy almond whipped cream for a decadent dessert that is so easy to make! It's the perfect summer dessert.
I love love love simple desserts. Easy desserts. Desserts that take almost no time to make. Even better on these hot summer days are desserts that you don't have to turn on your oven for. This is the season for no-bake desserts. Which is one of the huge reasons I keep making a little dish of fresh peaches and strawberries with an almond whipped cream.
Very recently I decided to get some peaches from the grocery store (after some animal stole all the peaches from our peach tree... grrrrr). They were ripe, and since I also had strawberries in the fridge and strawberries and whipped cream are one of my FAVORITE THINGS EVER, I decided to make something similar.
I was going to just make a vanilla whipped cream (my go-to), but Josh suggested an almond whipped cream might pair well with the strawberries and peaches. He offered to make the whipped cream. So I said, "SURE, GO FOR IT," and this dessert was born. I included a little fresh mint to add a little additional flavor and now this is a dessert I crave. Every single day.
And then did you know strawberries are incredibly healthy and packed with vitamins, minerals, and antioxidants? I know some people are a little scared of fruit because of sugar content, but DON'T be. Fruit has a lot of great vitamins and fiber! According to this article on Mayo Clinic, strawberries have a lot of fiber, vitamin C, and are one of the lower sugar fruits.
Ingredients needed:
- Fresh peaches
- Fresh strawberries
- Heavy cream
- Sugar
- Almond Extract
- Fresh mint leaves (optional)
Can you use frozen fruit in this dessert?
While some desserts are delicious with frozen or fresh fruit, you really want to use fresh fruit in this dessert. If you were to use frozen fruit and thaw it, the consistency would wind up being weird and mushy. Save the frozen fruit for baked desserts and smoothies!
What type of sugar should you use when whipping cream?
You can use regular sugar or confectioners sugar when whipping cream. If I'm eating it right away, I will frequently just use regular granulated sugar because it's easier to grab from my pantry. However, confectioners sugar can be great when you want the whipped cream to hold it's shape longer and to keep it from being grainy.
Some tips:
- Go ahead and leave the skin on the peaches (unless you hate skin). Makes it so much easier, and I honestly like the peach skin, peel... whatever you want to call it.
- I like to just cut the tops off the strawberries and then quarter them. Easy, and they wind up a great size for this dessert.
- Do NOT over whip your whipped cream. It will turn into the consistency of butter, and no one wants that. Watch it carefully when you're whipping it, and stop the mixer every so often to test out the consistency. You want it to be light and airy, and not too stiff.
How to make the peaches and strawberries with whipped cream
First, cut up the strawberries and peaches. (after you wash them, of course). I like to leave the skin on my peaches, but you can remove if you'd like.
Then, start whipping up the cream! Add the heavy cream to a bowl and then add the sugar and almond extract. Whisk together until fluffy and light. (If using a Kitchen-Aid mixer, use the whisk attachment). But don't overwhip! You want it to come together, but still be soft.
Seriously, how great does that whipped cream look?
Place the strawberries and peaches on a plate, then top with the whipped cream. Then throw a few mint leaves on there and dive in! Yum. This could easily be shared by two people, but I ate all of it. No regrets.
Strawberries, and peaches, and mint, and whipped cream. Drool-worthy.
